by: Vice Chancellor, Prof. Dr. Pirzada Qasim Raza Siddiqui

Spread over 1200 acre of land, the University of Karachi was established through the parliament as a Federal University in 1951. However, through another act of the parliament in 1962 its status was redefined as university of the province of Sindh. On 23rd October, 1950 the Karachi University Act was passed and after an amendment in 1951 it was enacted and Prof A.B.A Haleem was appointed as its first Vice Chancellor. For the first two years, the University of Karachi remained as an examination University for the affiliated colleges. In the year 1953 it started its teaching and research activities at two Faculties of Arts and Science. Opened with an initial intake of 50 students, the university is now a sprawling structure of 53 Departments and 20 world class and highly reputable Research Centers and Institutes, under eight faculties of Arts, science Islamic Studies Pharmacy Commerce & Business Administration, Law, Education and Medicine. At present the enrolment of a regular student at the Campus is slightly over 24,000. There are about 700 teachers and more than 2500 supporting staff.

The University in the beginning was housed in small buildings was housed in small buildings adjacent to the Civil Hospital. Meanwhile, due to rapid expansion, it began to be felt that the space in which the university was functioning was not enough for its needs.

Moreover the atmosphere of the congested and polluted area was not conducive to higher education and research. Thus a plot a of a1279 acres of land was acquired on the Country Club Road (now University Road). On 18th January 1960 the university was shifted to the new campus. Thus began a new phase in the life of the university. The day is still commemorated by various old students’ Association and the University administration jointly.

Karachi University always proudly mentions the names of renowned educationists and scholars associated with this institution of higher learning like, Dr. I. H. Qureshi, Dr. Mahmud Hussain, Dr. Salemuzzaman Siddiqui, Dr. Afzal Hussain Qadri, Dr. M. M. Ahmed , Dr Mujtaba Karim, Prof. M. Ilyas, Prof. Q. Fareed, Dr. Ibadur Rehman Khan, Prof Muntakhib ul Haq, Prof. Memony, Dr. S. M. Yousuf, Dr. M.A Wali, Dr. Karawala. The faculty was drawn not only from Pakistan but also included eminent educationists form Europe and America.

Herbal Benefits of Thyme

]]>

Pun-provoking thyme is one of the most popular and commonly used culinary herbs. It grows well in most climates and prefers a light, sandy, well-drained, dry soil in full sun. It is one of the easiest herbs to grow in containers on an apartment balcony, but is quite susceptible to root rot and fungal disease if grown in soil that is too moist or heavy. Thyme essential oil is rich in thymol which is a very good antiseptic, antibacterial and anti-oxidant. Therefore it is used in mouth and throat infections like tonsillitis, mouth ulcers and dental ailments. In ancient times, Thyme was known as a health and life-giving herb. It was used medicinally for such widely differing ailments as tonsillitis, asthma, gout, and headaches and it was considered one of the best cures for whooping cough. In modern times, however, Thyme is mostly used for culinary purposes. Regardless of which variety of thyme you choose to grow, they all have a woody, twig like stem and small oval-shaped leaves. Your herb will have small lavender, pink or white blooms that appear in early summer or late spring depending on the climate.

Sow the seed indoors in a sunny location in early spring. Growing thyme is as easy as child’s play. In fact, you could include your children in gardening activities. This will start another generation on the right path to protecting our environment. The leaves and flowering tops are used to add flavor to foods such as meats and poultry, herb butter, sauces, soups, salads, tomatoes, pasta, egg dishes, cheeses, stuffings, fish and clam chowder. After the root-ball is established, it is time to take it outside, for the real fun to begin! Thyme is used undiluted in the Raindrop Technique for its anti-infectious properties. It is considered a “HOT” oil and therefore caution should be taken in its use. You can dilute one part essential oil with four parts mixing oil. It can also be diffused or taken as a dietary supplement. Nutritionally, Thyme is high in Vitamin C and Vitamin A. Consistency is also seen with Iron, Potassium, Zinc, Manganese and Phosphorous.

Give your thyme herb the soil it desires in order to see the best harvests. Thyme, like most herbs, prefers soils, which are well drained. This means they prefer to be in sandy soils. This is because the roots will become mildewed and the plant will die if there is too much water in the soil.Vegetables often benefit from the judicious use of thyme spice. You can improve the flavor of winter tomatoes drastically by slicing them in half, placing them cut side up on a baking sheet, using a pastry brush to spread olive oil on them, and then sprinkle on some of the herb thyme.

Thyme has been used for centuries as a potent antiseptic. In ancient Egypt it was one of the ingredients in embalming ointments. Throughout the Middle Ages, many of the nobility used aromatic herbal bouquets of thyme to fend off both bad odors and germs. thyme may be used internally and externally, but the essential oil should never be taken internally nor applied undiluted to the skin. Recent research has indicated that thyme is such a powerful tonic that it is an effective counter to age-related problems. Added to a hot bath it is certainly a potent muscle relaxer. The herb is vigorously antiseptic and as a lotion it can be applied directly to infected wounds.

The use of thyme was first documented by the Ancient Egyptians hence it grows best in hot, sunny places and needs lots of drainage. The good news is that they can grow almost anywhere: even dry, lifeless soils. Thyme is supposed to aid in digestion, as well as have antiseptic properties. It is used in teas as well as skin care products. However, don’t let this herb fool you. Internally, the herb whether fresh or dried, is used for digestive disorder, sore throat, fever, to improve health of individual cells in the body, to bolster nerves, to remove uric acid and treat cough. Thyme tea can help to induce perspiration at the start of a fever or cold episode. Thyme is a major culinary herb and has a wonderful aroma. You can use thyme in a multitude of dishes, either fresh or dried. Harvest the leafy tops and flower clusters.

The highly antiseptic properties of thyme make it a common ingredient in antibacterial mouthwash, antiseptic lotions, commercial disinfectants and toothpastes. Due to its healing virtues, thyme was used by the British army to treat wounded soldiers during World War Two.

Put Some Cilantro In Your Favorite Food Recipe Today!

]]>

From all your health nuts here at herb and spice headquarters http://www.sharpweblabs.com/ and http://www.floridaherbhouse.com/ we welcome you to our blog. April we hope will bring more spice business in as the spring approaches and the outdoors become active again with picnics, parties, and fun filled festivals! With all these come of course what else…. Food, Food, and more Food. With food comes chefs be it beginners or the most seasoned cook out there (No Pun Intended). With cooking comes new recipes and wit new recipes comes our spices. With now over 600 specialty organic certified and natural herbs and culinary spices we are excited to welcome to our herb house our newest member Cilantro and Cilantro Powder.

We have been unable to get a quality cilantro spice that passes all our quality and taste tests but we have finally found one and expect it on our shelves by mid April 2009. So for those who have little or know real knowledge of this award winning spice lets talk about it!

Our good friend Branford who makes his own line of marinades, hot sauces, and barbecue sauces recently came out with a new cilantro sauce. We must say that is tasted better than it sounded and we wish Branford from BranfordsOrginals web site great success with this new creation!
Cilantro is from the parsley family but has an entirely different taste so we try not to use the two terms together much. Two terms that can be used together are corainder and cilantro. Actually the leaves from the corainder herb plant are called cilantro. The corainder plant that develop more slowly produce the leaves we harvest as cilantro. The plants that are allowed to develop longer have their seeds used as corainder seeds.
Cilantro is very popular in Mexico, Asia, and Italy as a garnish for delicious salsa, sauces for chicken and pork, and other great cuisines. Cilantro is usually added to recipes at the end to preserve its flavor.
Below is our favorite cilantro recipe!

Ingredients: 4 pork chops, trimmed of excess fat Salt and pepper, to taste 1 tablespoon vegetable oil 1 bunch fresh cilantro, coarsely chopped and divided 1/2 red onion, chopped Salt and pepper to taste 2 teaspoons ground cumin, divided 2 teaspoons chili powder, divided 2 medium tomatoes, coarsely chopped

Directions:
Heat vegetable oil in large non-stick skillet. Rub pork chops with salt and pepper. Place on hot skillet. Sear each side 2-3 minutes. Meanwhile, place half of the chopped cilantro, red onions, half the cumin, half the chili powder, and salt and pepper in bottom of crockpot. Place seared pork chops on top. Place chopped tomatoes, remaining cilantro, remaining cumin, remaining chili powder, and salt and pepper on top of pork chops. Cook on HIGH for 3-4 hours. Serve with Spanish flavored rice and steamed broccoli.

Have A Spicy Day! Sincerely, Stephen C. Sharp FloridaHerbHouse

Guide To Sea Salt

Thanks for inviting me today to talk a little about Hawaiian Sea Salt and its origin. To begin let me just clarify that sea salt is not the same as traditional table salt and is made from the evaporation of ocean water while traditional table salt or NaCl (Sodium Chloride) is mined underground and refined with anti-caking agents. True sea salts originate from many exotic locations around the world. The Hawaiian Salt is harvested in Hawaii, hence the name!

Cultivating Basil – Growing and Caring for Fresh Basil

]]>

Few herbs demonstrate the difference between fresh and dried as distinctly as basil. Fresh basil bursts with aroma and flavor while dried pales pitifully in comparison. This and the ease with which basil can be grown even under the poorest of circumstances make it the perfect herb to plant. If you only ever grow one herb make it basil. If you grow a full herb garden make sure to include a selection of different basil varieties.

Picking a Basil

The first concern you should have when growing basil is choosing a variety. There are innumerable basil varieties available. There are those that possess the traditional flavor and aroma of basil, others that are prized for their striking purple leaves, and still others that exhibit flavors and aromas such as lemon, anise, and “Mexican spice.” It is best to go to a store with live basil plants for sale so you can see the available varieties for yourself. The store owner won’t appreciate you plucking leaves and tasting them so a good way to identify the qualities of an herb without damaging the plant is to smell it by gently rubbing a healthy leaf to release its aroma. Select the basil that strikes your fancy – they all grow about the same.

Planting Basil

If you’ve ever planted anything; growing basil will be easy. Pick a spot that will allow it to grow to about 2 feet up with 1 foot clearance to the sides. Basil, like many of the most popular herbs, is native to the Mediterranean region so it likes lots of sun and well drained soil. It also wants plenty of water but don’t plant it where it will sit in a puddle. Make sure that your soil is loose and drains easily. If you’re growing your basil in a pot regular potting soil will do nicely. Once you’ve worked the soil, take the plant from the container and loosen the root ball. Dig a hole about twice the depth and width of the ball and hold the plant so that the top of the ball is just below the surface. Rake the soil back into the hole making sure that it fills in under the roots. Tap the soil down and around the base of the basil but not too firmly. Finally, soak the soil down nicely and you’re done.

Basil also starts easily from seed but its best to start with plants, especially if you’ve never planted basil before, so you can pick the varieties that most appeal to you. At the end of the first season your plants will produce plenty of seeds for next year. Start them indoors a couple of weeks before last frost then transfer the seedlings as described above after all danger of frost is gone.

Caring For the Basil

It is here that herb gardening and flower gardening diverge. Caring for flowering plants usually employees techniques designed to emphasize the size of both the leaves and flowers. Herbs cultivated for flavor have quite a different purpose. The bigger and lusher an herb grows the less flavor it will have. Unless your herbs are obviously malnourished it is not generally recommended that you give them plant food. Smaller, denser plants will develop more concentrated and complex flavors. Most herbs, including basil, will thrive under neglect. Aside from occasionally watering them, there is very little that you should need to do for successful basil plants. Towards the end of the summer your plant will begin to sprout flowering stalks at the top of each branch. Simply pinch these off so you will continue to have plenty of healthy leaves for cooking. When you’re finally ready to let it go to seed at the end of the season, you can collect plenty of seeds for next spring from these stalks.

Harvesting Basil

Here’s the pay off. Three or four healthy basil plants will provide more than enough for your favorite recipes all summer long. Clipping fresh basil is easy. Pick the longest branches and clip the branch about half-way down right above a leaf cluster. Never harvest more than a third of the plant and give it a week or so of healthy growth between harvests. You can harvest basil as soon as the plant is established and until first frost.

As you can see, growing and harvesting basil is easy and the rewards in the kitchen are certainly worth the effort. There is simply no substitute for fresh basil.
