Thyme is definitely a user-friendly herb. It is an easy to grow perennial, and provides a variety of choices in their growth habits and flavors. It likes a poor, dry soil in full sun.   

Thymes are evergreens, and some varieties like common garden thyme can have a hard time surviving a bad winter in the extreme northern zones. Low growing thymes have a better chance to survive at ground level. Choosing your plants will mean you have to take the weather into consideration. The flavor must also be a consideration. Some of the more popular culinary thymes are:

   · English Garden Thyme
   · Caraway Thyme
   · Lemon Thyme
   · Narrow Leaf French

I recommend buying a plant that is rich in fragrance from your garden center as opposed to using seeds. The reason for this is thyme is a plant that grows slowly.

All types of meat, stews, sauces, poultry, and vegetables are improved with the use of thyme. You can harvest this plant any time during the season, but you’ll get the most flavor when the flowers are just beginning to open. Thyme is an herb conducive to drying. Make small bundles and hang in a dark, warm place.

Strip the leaves from the stems when the herb is very dry. They will retain more flavor if you can keep from breaking them while storing. We use amber containers to store the herbs. It is easy to check for condensation daily. If you find moisture forming just remove the herb and proceed with the drying process. When your confident the drying process is complete, store the finished product in a cool dark place.

Although most of us think of it as a simple garnish, herbalists and other traditional healers believe that the benefits of parsley are numerous. Scientific evaluation of the dietary effects of parsley support some of these traditional uses. And, the nutritional value of parsley is higher than you might expect.

People who suffer from indigestion or constipation should add some parsley to their dishes as it can help to regulate the digestive system and help you to have better and more regular bowel movements. Some say it is even good for weight loss but I don’t think this is the main reason why you should eat it.

Parsley isn’t understood all that much, but there are several important attributes to it. It is probable that the original use of the plant on the dinner plate was practical rather pretty. Before the birth of modern medicine, many herbs were routinely used to take care of life’s little problems.

On the bright side, they decorated the heroes of the isthmian games with parsley garlands and decorated the many maidens that sang at feasts in the same way. This last use may be associated with the great effectiveness of parsley in increasing menstruation and helping in regular process of monthly periods. This action is due to the presence of apiol which is a constituent of the female sex hormone estrogen.

Parsley is native to the Mediterranean region of Southern Europe and has been cultivated for more than 2,000 years. It was originally used as a medicinal plant (see below) prior to being consumed as a food. Ancient Greeks held parsley to be sacred, using it to not only adorn victors of athletic contests, but also for decorating the tombs of the deceased. While it is uncertain when and where parsley began to be consumed as a seasoning, historians think it may be sometime during the Middle Ages in Europe.

The component, myristicin has been shown to be effective at preventing tumor formation, especially in the lungs. These studies were done on animals and more extensive research will need to be done, but, the results look promising. In fact, the oils in parsley have been shown to be very effective in neutralizing particular carcinogens, such as benzopyrenes found in cigarette smoke and charcoal grill smoke.

Although we all like to use fresh herbs if we can get them, it seems that there are more benefits than first thought, especially when us foodies started to first go all hog-wild on the “got-to-be-fresh-happy” with the use of non-dried herbs in our cooking. So many of us grew up with dried herbs, and for many more, dried herbs that would stay in our cupboards for years. I know I am not alone here.

A stronger tasting clove of garlic indicates that it has more sulphur content and therefore more medicinal value. Some people feel that organically grown garlic tends to have a higher sulphur level and hence greater health benefit. Others prefer to take odorless garlic pills or capsules but most garlic advocates believe the processing of garlic to remove the odor also drastically lessens the health benefits.

Garlic (Allium sativum L.) is part of the lily family and it’s medicinal use dates back to 4000 BCE. It grows well in nearly every climate, so it is known throughout the world. Hippocrates, the founder of western medicine, used garlic in some cancer treatments. In ancient Egypt garlic was valued as a general health tonic and sometimes even used as currency. Later in the middle ages, garlic was used in treating victims of the plaque.

Thyme has had a lot of uses as an herb garden plant in the past; embalming, bathing, and flavoring food tells only part of the story.

Many historians believe that the Sumerians were the first to cultivate thyme, and, in the process, discovered that the herb had wonderful antiseptic properties; they used it as an anti-fungal and disinfectant. And of course the Egyptians were well known for embalming, and they used thyme and other herbs to preserve their dead.

The ancient Greeks used thyme in a variety of ways as well. The old timers would compliment someone by telling them they smelled of thyme which was burned in their temples and got impregnated in their clothes. It was no doubt a great way to tell if someone went to temple or played hooky, and probably food for gossip over the dinner table.

Not be outdone, the ancient Romans used thyme to add flavor to cheese and liquor, and even added it to their baths before a battle believing it gave them a boost of bravado.

Thyme also played a role in biblical history. Many Christians have a belief that thyme lined the manager where Jesus was born, and the practice is still repeated today in many Nativity scenes around the world during the holidays.

Aside from the role thyme has played in history, it should play a major role in today’s garden. Add it as a seasoning to any meat. Consider adding it to eggs, cheese dishes as well as vegetables. And don’t be afraid to experiment with it on fish or poultry.

Thyme is a hardy plant, needs little maintenance, and practically grows itself. It likes dry, lean soil. Although you can grow thyme from seed, it may not grow true because the varieties cross pollinate and hybridize, so we suggest you grow it from cuttings.

If thyme is grown in a hot climate it will start to take on the characteristics of a shrub in early spring if it’s not pruned regularly and hard. If the goal is to cover large areas, space new plants 6 inches apart.

In using thyme, one is only constrained by imagination. Remember, the Romans bathed in it, the Greeks smelled of it, the Sumerians used it as a disinfectant, and the Egyptians embalmed with it. Although we don’t suggest the last use, we do suggest you make a special place in your garden for this wonderful, useful and ancient herb.

A cook’s best friend, Petroselinum crispum, commonly known as curly parsley, is used in myriad ways in the kitchen.  Often discarded by diners as ‘just a garnish,’ parsley has many valuable nutrients including bet-carotene, calcium, iron, and Vitamins A and C in easily assimilated form.  Parsley has a pleasant flavour and is often used as a breath freshener particularly after eating raw garlic and onions.

Parsley is a hardy biennial or short-lived perennial and grows 10 -12 inches (24 – 30 cm) tall.  Cultivation requirements: fairly rich, moist soil, full sun or partial shade, water well during dry periods.  In the second year, yellowish-white flowers are produced.  Parsley can be treated as an annual for cooking purposes, as the first year’s leaves are superior to the later crops.  Parsley will self-sow so you can leave it where it is.  Curly parsley makes a gorgeous edging along garden beds and is attractive planted with flowers and in container gardens.  You can start the plants in the house prior to planting in the garden or you can seed it straight into the location where you want it to grow.

Parsley can be grown indoors or out.  Grow parsley from seed or you can purchase started plants at the garden centres.  I have read numerous times that it is hard to germinate parsley from seed but I have not had any problems.  If growing parsley in pots, plant in a deep pot to accommodate the long taproot.  Parsley can be brought indoors at the end of the growing season the same as other herbs.  When bringing indoors, pot up in fresh potting soil, and check for critters.  If there is an infestation, spray with a soap and water spray.

Parsley requires at least 5 hours of sunlight if grown indoors.  If you are growing it on a windowsill, parsley should be turned regularly to ensure that all sides receive sunlight.  Parsley grows well under fluorescents lights during the winter.  Hang lights 6 inches (15 cm) from the plants and leave on for 14 hours a day.

In the garden, parsley can be planted near asparagus, corn, and tomatoes.  In the kitchen, parsley can be used fresh in salads, sauces, and soups.  Add to stews, stuffing, vegetable dishes, eggs, tabbouleh, dips, biscuits, omelets, rice and pasta dishes, meat, fish, shellfish, poultry – the list is endless.  Parsley can be mixed with soft cheeses such as ricotta or cottage cheese.  Chop it finely, mash into butter and serve with bread, or melt it into casseroles, scrambled eggs, or pasta.  Tie 3 sprigs of parsley, 1 sprig of thyme, and 1 bay leaf together with string to make a bouquet garni.  Add the herbs to a soup pot and pull out just before serving.

Parsley can be dried or frozen.  To store fresh parsley in the fridge, place the stems in a glass jar of cold water.  It will stay fresh for several days.
