Parsley is an herb that contains an ample supply of vitamins A, B, C, iron and calcium. It is a perfect compliment to salads and meats of all kinds.
Parsley grows well in soil rich in nutrients and in full sun. Parsley, though it is a biennial, is grown as an annual. The harvest in the first planting season will be good and it should produce a good harvest early in the following season. We find it more productive just to replace the plants each spring rather than get just one good harvest.
Our favorite parsley (tastes better) is the Flat-leaf Italian parsley. It is a fairly large plant that grows to about 12”-15” and delivers a bountiful harvest. Two other widely grown kinds of thyme are the Flat Leaf and Triple Curled. The Triple Curled is the one you find being used as garnish in the restaurants.
Parsley is easily grown from seed. Start the seeds in February by placing them in a freezer for a few weeks. They will germinate quicker when they are planted. Because I try to find the easy method (yep, I’m lazy) I simply purchase healthy plants from the garden center to transplant in the garden.
You can harvest this plant any time during the growing season. Parsley is not conducive to drying. Just finely mince and place it in plastic storage bags for freezing. Remember to label your bags. I have forgotten to do this on more than one occasion and when I had multiple bags of different herbs in the freezer. I learned this lesson the hard way.
