Thyme is an integral part of Mediterranean cuisine. It has a strong flavor, but blends well with other flavors commonly found in the food. Fresh thyme has better flavor, but does not store well, which is why many home cooks choose to grow their own thyme garden to have the fresh herb on hand at all times.
While thyme can be grown from seeds or cuttings, they tend to not do well. For this reason, many gardeners choose to start their plant from root divisions or purchase young plants. Roots are typically divided in springtime using plants that are three to four years old. Plants will yield three or four pieces, which can then be planted in the ground. Around mid-summer, they can be harvested moderately.
If you choose to use seeds, start them indoors around March. Add potting soil or compost to your container and scatter seeds over the top of soil. Scatter a light layer of soil over seeds. Water soil thoroughly and cover with plastic. Place the pot in a warm location of at least 60 degrees F. It can take anywhere from one week to three months for seeds to germinate, if they do. Once plants have reached a height of four inches and there is no risk of frost, they can be transplanted outdoors or into a larger pot for indoor gardening.

Whatever method you start with, you want to be sure they have adequate spacing when planting. Most plants can spread up to one foot. Plant this distance apart to ensure they have enough room for growth. Otherwise, you risk your plant failing to thrive because it doesn’t have enough space.
Provide it with light well-drained soil. A common problem to avoid is making the soil too rich. This makes the plant “leggy.” The plant can be fed occasionally, but take care that the soil quality is not overly enriched.
Thyme requires only occasional watering. Over-watering can cause your plant to wither or have decreased flavor. Allow to dry between waterings and water sparingly.
Like other plants native to the Mediterranean, thyme needs full sunlight. If growing indoors, make sure it is placed in a windowsill that gets lots of sun. However, since it is a hardy plant, it can be grown outdoors pretty much year-round as long as it is provided with some shelter.
If you choose to leave your plant outdoors year-round, mulch the plant in late fall if the area is prone to freezing. The mulch should then be removed in the spring.
Harvesting thyme is simple. Plants should be harvested lightly the first year. Be sure that you take no more than one third of the plant, preferably less. After the first year, you can harvest leaves as needed and your plant should continue to thrive. Just snip leaves whenever you need some for cooking. For optimum flavor, harvest in June or July.
While thyme can winter outdoors, it does tend to stop growing during the cooler months. Take care that you only harvest lightly during these months. To save thyme for later use, it can be frozen or dried. Unlike other herbs in which these methods reduce flavor, thyme tends to hold flavor.
